Credits for this recipe – http://www.youtube.com/watch?v=pEZUKcuZQck. I am simply providing a written version of the same as you cant afford to prepare this dish watching a 10minute video. so here is a quick step-by-step procedure:

    Lets start with the ingredients:

    1 Bay leaf (Patta Leaf)
    1 Cinnamon Stick (Patta)
    4 Cloves (Lavang)
    Turmeric Powder – 1/4 tsp
Onion – 1 Large (finely chopped)
Garlic – 1 Tbsp (finely chopped)
    Salt to taste
Green Chillies (1 or 2 – to taste)
Tomatoes – 2 small (finely chopped)
    Cumin Powder – 1tsp
Red Chilli Powder – to taste (1/4 tsp)
    Dried Fenugreek Leaves (vendayam/Methi) – 1 tbsp
Mushrooms – 10 button size (cut into two, dont cut too fine)

    Preparation

    1. Take a medium sized pan and keep a medium flame
    2. Add two tbsp of cooking oil
    3. Add Cinnamon stick, cloves and Bayleaf and stir fry for a few seconds
    4. Add turmeric & immediately add onion and continue to stir fry (4-5 minutes) till you get a good mix
    5. Add Salt and mix well
    6. Add garlic & green chillies and stir fry. Cook for 3-4 mins
    7. Now add tomatoes and mix well
    8. Cover the lid and cook for 8-10 minutes till the moisture in the tomatoes is gone. Should almost look like a paste
    9. Add cumin powder and red chilli powder and mix well
    10. Now add the Mushrooms and mix it well. Cook for about 4-5mins
    11. Now add the Fenugreek leaves by crushing and rubbing them b/w your palms and allowing the powder to fall into the pan
    12. Mix well

Your dish is ready. Serves as a great starter. You can decorate the plate with a slice of tomato and raw onions!
