Brinjal Coriander Curry

Ingredients -

1/2kg Brinjals (long or short)

4-5 Green chillies

1 Onion (small size)

1 small piece of Ginger

1 small bunch of coriander leaves

Cooking Oil

Salt

Small piece of fresh coconut

Method of Preparation -

1. Cut brinjals into preferably long pieces. Cut Onion in any shape.

2. Grind Onion, ginger piece, green chillies, coriander leaves and coconut into fine paste and keep aside.

3. In a pan, put 2-3 tea spoons of cooking oil and heat it.

4. Once the oil is hot, season with mustard seeds and curry leaves and then put the cut brinjal pieces and cover the pan with a lid.

5. When the brinjal becomes soft, put the coriander paste that was made earlier and also add salt to your taste.

6. Cook this for about 2-3mins. The tasty brinjal coriander curry is ready. In Andhra, the curry is eaten with cooked rice with little bit of ghee. It tastes yummy. This can also be had with rotis.

 The above preparation can be used with other vegetables like Beans, Ridge Gourd, Bottle gourd, Capsicum and Chow Chow also.
