Spicy Brinjal Curry
Ingredients -
1teaspoon of coriander seeds (dhaniya)
1 teaspoon Urud Dal
1 teaspoon Channa Dal
4-5 Red Chillies
5-6 peanuts
1/2 kg Brinjals
1 Onion (small size)
Method of Preparation -
1. In a pan with little oil, fry coriander seeds, urud dal, channa dal, red chillies, pea nuts, separately and make a powder of them.
2. Cut brinjals into long pieces.
3. Heat the pan with 2-3 spoons of cooking oil in it. Season with mustard seeds , hing , curry leaves.
4. Put the brinjal pieces and fry.
5. When the brinjal is half cooked, put finely chopped onion and the powder which you had made earlier into it. Add salt to your taste.
6. Close the pan with a lid and cook it in low flame till it is done. The spicy brinjal curry is done.
The above preparation can be made with other vegetables like Beans, Ladies finger, Ridge Gourd, Capsicum also.
