Stuffed Brinjal Jeera Curry
Ingredients -
1/2kg Brinjal (round ones not long ones)
1 teaspoon Jeera
4 Dry chillies
Oil
Salt
Method of Preparation -
1. In a small kadai with little oil, fry jeera and dry chillies separately. Powder these together along with salt.
2. Without fully cutting open the brinjals, cut them from 4 sides and stuff the powder(required quantity) into each of the brinjals.
3. In a pan, add sufficient amount of cooking oil, and fry the stuffed brinjals till they become soft.
The above preparation can be made with Ridge Gourd also. In this case though, you would be cutting Ridge gourd into pieces and putting the powder to it while cooking it.
